Black Bean Burgers

Veggie burgers fall into the category of foods I had no intention of ever trying … until the Daniel Fast. I didn’t have a reason to eat black bean burgers when hamburgers were readily available, but the limits of a vegan diet gave rise to a revolution in the kitchen.

While they don’t necessarily taste like beef, these burgers do have a meaty quality, and great flavor, too. They’re a little crispy on the outside and softer on the inside. When you add a few toppings, you might even forget you’re eating beans!

Most bean burger recipes call for an egg to bind the ingredients together. Did you know you can make an egg substitute out of ground flax and water? Mix 1 tablespoon flax seed meal with 3 tablespoons water. After a few minutes in the fridge, the mixture will thicken into a gel that is similar in consistency to a raw egg. Easy peasy!

These burgers are freezer-friendly, so if you don’t think you’ll eat them all, pop a couple into the freezer before baking for an easy meal later on. Your future self will thank you.

 

Black Bean Burgers

Ingredients

  • 1 tablespoon flax seed meal
  • 3 tablespoons water
  • 1 teaspoon olive oil
  • 1/4 cup onions, diced
  • 1 clove garlic, minced
  • 1 can (15.5 oz) black beans, drained, rinsed and patted dry
  • 1 cup mushrooms, sliced
  • 1/4 cup rolled oats
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl, mix flax seed meal with water until combined. (This creates a “flax egg.”) Place bowl in the refrigerator.
  3. In a small frying pan, heat oil over medium heat. Sauté onions until translucent. Add garlic and cook 1 minute more. Set aside.
  4. Place black beans, mushrooms and oats in a food processor and pulse until combined. The mixture should not be completely smooth; small chunks of bean and mushroom should remain.
  5. Transfer mixture to a bowl and add onions, garlic and seasonings. Pour in flax egg and stir until combined.
  6. Grease a baking sheet with olive oil. Measure 1/3 cup for each burger, and form into patties. Place patties on prepared baking sheet and bake for 15 minutes.
  7. Flip burgers and bake for an additional 15 minutes.
  8. Serve with avocado slices, sautéed onions, tomatoes or mixed greens.

Notes

To freeze, place uncooked burger patties on a baking sheet lined with wax paper. Freeze until solid and store in a freezer bag. Frozen burgers may require a few extra minutes of baking time.
