If you need a hot breakfast on a cold morning, but don’t have time to cook, I’ve got just the thing. This easy apple cinnamon oatmeal takes less than three minutes from start to finish, and it will leave you feeling warm and satisfied.
Here in northeast Ohio, it has been brutally cold. As I write this, the temperature is 14 degrees Fahrenheit, and the forecast is calling for single digits tomorrow. Meanwhile, my husband and I are fantasizing about packing up and moving to Sarasota.
On cold days like these, I can’t bring myself to drink a smoothie for breakfast, so I turn to oatmeal more often than not. You won’t catch me with a boring bowl of oats and water, though. No way. It’s gotta be creamy, and it’s gotta have flavor. To satisfy those criteria, I rely on almond or coconut milk and some sort of fruit infusion.
For this recipe, unsweetened applesauce brings the flavor, and apple cider takes it up a notch. The cider intensifies the apple flavor and adds a little extra sweetness, but you can certainly omit it and use additional almond milk if you’d like. A generous sprinkle of cinnamon tops it off.
I’ve been partial to quick oats lately, not just because of their speedy cooking time, but also because of their smooth, creamy texture. Old-fashioned oats can easily be substituted but will require an extra 1-2 minutes in the microwave.
And just like that, breakfast is served!
Yield: 1 serving
Ingredients
- 1/2 cup quick oats
- 1/4 cup unsweetened applesauce
- 1/4 cup 100% apple juice or cider*
- 1/2 cup almond milk
- Cinnamon to taste
- Dash of salt
Instructions
- Combine all ingredients in a microwave-safe bowl and stir. Microwave on high for 1.5-2 minutes.
Notes
*Additional almond milk can be used in place of the apple juice or cider.
If substituting old-fashioned oats, increase cooking time to 2.5-3 minutes.
