This healthy alternative to McDonald's Shamrock Shake is dairy free and filled with wholesome ingredients.

By now we’ve all heard how terrible McDonald’s Shamrock Shakes are for you. They’re loaded with fat, calories, sugar and artificial ingredients. I’ll spare you the disturbing details since they are exactly what we’ve come to expect from America’s top fast food chain.

If you’re a fan of the Shamrock Shake, but you’re participating in the Daniel Fast — or maybe you’re just trying to watch what you eat — I’ve got a tasty alternative for you. My dairy free version starts with a base of coconut milk, and it’s sweetened with dates. Most of the flavor is derived from extracts, and the green hue comes from a handful of spinach.

I’ll admit this would probably be even better with real mint leaves and vanilla beans, and at some point I may experiment with those ingredients. For now, I like the convenience of using pure extracts that I already have on hand.

If you’re skeptical that a vegan milkshake with no added sugars (and spinach!) could actually taste good, I think you’ll be pleasantly surprised by this minty treat. Even my picky 3-year-olds approve of the sweet, smooth taste.

Ingredients

  • 1 can (13.5 oz) full-fat coconut milk
  • 6 Medjool dates (about 4 oz)
  • 1/2 cup spinach leaves, packed
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • Splash of nondairy milk, as needed

Instructions

  1. Shake coconut milk can well to combine liquid and solid. Pour milk into an ice cube tray and freeze several hours or overnight.
  2. Place frozen coconut milk cubes in a high speed blender along with dates, spinach and extracts. Blend until smooth. At this point the mixture should have the consistency of soft serve ice cream.
  3. Add a little bit of nondairy milk and continue blending until the mixture reaches a drinkable consistency.

Notes

Canned, full-fat coconut milk is what gives this shake its think, creamy consistency. I don't recommend substituting coconut milk from a carton.

Medjool dates are larger, softer and sweeter than other varieties. The smaller, dried types (such as Deglet Noor) will be more difficult to blend.

      Hi McKenna! All traditional sweeteners are generally considered off-limits for the Daniel Fast, even natural ones like stevia, maple syrup or honey. All fruits are Daniel Fast approved, which is why I use dates in this recipe.
